Last night we made Kalua Pork and we had quite a bit left over so we made tacos and quesadillas! They were delicious! What a great way to use up leftovers!
Shredded Kalua Pork
Rice (leftover from the Kalua Pork dinner)
Salsa
Avacado
Lime
Sour cream
Cilantro
Warm corn tortillas
Layer as follows on the corn tortillas: rice, Kalua pork, salsa, avacado, a squeeze of lime juice, sour cream, then garnish with cilantro!
KALUA PORK QUESADILLAS:The Kalua Pork Quesadillas were really yummy too! I don't know which I liked better, the tacos or the quesadillas!
Flour tortillas
Monterey Jack cheese, shredded
Shredded Kalua Pork
Cilantro
For these, just prepare like you would any quesadilla... tortilla, cheese, pork, cilantro... fold over, heat in skillet and serve when cheese is melted. You know the drill. Serve with salsa and sour cream.
